ញាំសាច់មាន់ត្រយូងចេក

Ingredients:

500g cooked and shredded chicken breast
a few cooked/sliced prawns
3 shallots
1/2 teaspoon olive oil
1 orange or red capsicum (bell pepper)
1/2 cup fresh mint chopped
1 banana flower, the inner soft pink part only

To make the dressing:

1 Tablespoon palm sugar
1 Tablespoon lemon juice
2 Tablespoons fish sauce
1/2 teaspoon sesame oil
1 chili pepper finely minced
1/5 tea spoon salt
a handful of crunched roasted peanut

To do:
1) Finely slice shallots. In skillet heat oil, add shallots and saute for about 4 minutes until caramelized. Set aside.
2) Finely slice capsicum and banana flower, set aside.
3) In large bowl mix all dressing ingredients together, stir until palm sugar is dissolved. Add shredded chicken, and prawns. Mix well.
4) Get a large bowl and fill with cold water. Add some lime juice. Remove outer purple leaves from banana flower and discard. Next remove and keep all the light colored leaves and discard the small mini bananas which are between the layers. Stack all the light colored leaves together, and with a very sharp knife, finely slice them into tiny threads. Immediately put sliced pieces in lemon water in bowl in order to retain the natural color. If the banana shreds turns dark, add more lime juice into the water and stir till the banana shreds turn back to natural color again.
5) Remove sliced banana flowers from water and drain well. Add sliced banana flowers, capsicum, shallots and mint to chicken and prawns and mix well.
6) Adjust your taste. Add more crunched peanut and mints if you like, for better taste.
